Chocolate Crepes With Berries PDF E-mail
Ingredients:
1/2 cup instant-blending or finely milled flour
2 tablespoons unsweetened cocoa powder
1/2 cup skim milk
2 eggs, lightly beaten
2 tablespoons honey
2 cups nonfat frozen vanilla yogurt
2 cups fresh berries

Instructions:
In a medium bowl, combine the flour and coca. Add the milk, eggs and honey. Stir until combined, about 1 minute. The mixture s too tick, add more milk, 1 tablespoon at a time.

Coat an 8" no-stick frying pan with no-stick spray and heat over medium heat until hot.  Pour 3 tablespoons of batter into the pan and swirl to coat. Cook the crepe until it releases easily from the pan, about 1 minute. Turn the crepe and cook on the other side for about 30 seconds. Continue until all the batter is gone.  The batter makes about 8 crepes.

To serve, place 1/4 cup frozen yogurt on each crepe and roll. Top with 1/4 cup berries.
