| Cremini Mushroom Spread |

Ingredients: 8 ounces cremini or brown mushrooms 1/4 cup chopped fresh parsley 3 scallions, cut in several pieces 2/3 cup Yogurt Cheese 2 ounces fat free cream cheese, Fromage Blanc, or Neufchatel cheese 1/4 teaspoon salt 1/8 teaspoon freshly ground pepper Instructions: Chop mushrooms, parsley, and scallions together in a food processor. Remove 2 tablespoons vegetable mixture and set aside. To mushrooms in processor, add Yogurt Cheese, cream cheese, salt, and pepper. Pulse to blend.
