Fresh Mushroom Salad Mimosa PDF E-mail
Ingredients:
8 oz (about 2&1/2 cups) sliced fresh mushrooms
1/3 cup fat-free Thousand Island, ranch, or Italian dressing
4 large Boston or red leaf lettuce leaves
1 hard-cooked egg white, finely chopped
2 Tbsp chopped fresh chives or parsley
1/8 tsp freshly ground pepper

Instructions:
Put the mushrooms in a medium bowl; toss with the dressing and mix well. Line 4 serving plates with lettuce; divide the mushroom mixture among the plates. Sprinkle each salad with egg white, chives, and pepper.
