Ingredients: 1/2 cup (2 ounces) crumbled gorgonzola cheese 1/4 cup light ricotta cheese 2 teaspoons minced fresh basil or oregano or 1/2 teaspoon dried basil or oregano 4 leaves ( each 14"x18") phyllo dough 1 tablespoon sesame seeds butter or olive oil flavored cooking spray Instructions: In a small bowl, mix gorgonzola, ricotta and herbs with a fork. Preheat oven to 375 degree's. On a cutting board, lay out 1 leaf phyllo, and spray top with cooking spray. Sprinkle with 1 teaspoon sesame seeds. Gently lay a second leaf of phyllo on top of the first; spray with cooking spray. Cut phyllo layers into 10 long strips, each 1-1/2" wide. Place small scoop of cheese filling (about 2 teaspoons) 1 inch from end of each strip. Fold corner of one strip diagonally across to opposite edge to form triangle. Spray top of triangle with cooking spray; sprinkle with a few sesame seeds. Fold triangle end over end until entire phyllo strip is folded. Continue to fold triangles end over end, spraying each triangle and sprinkling with sesame seeds. Repeat entire process with remaining phyllo leaves, filling and seeds.
