Ingredients: 1 large, ripe papaya 4 leaves green leaf lettuce 2 ounces paper-thin slices of prosciutto or lean smoked ham 8 ripe black olives (optional) Instructions: Line four plates with lettuce leaves, and arrange two strips of papaya on each plate.
