Ingredients: 2 cups water 1 cup long grain white rice 1 1/4 teaspoons salt, divided 12 ounces fresh asparagus, trimmed, cut diagonally into 1-inch pieces 1/4 cup olive oil 3 tablespoons lemon juice 1 teaspoon lemon zest 1/4 teaspoon pepper 1/2 cup chopped green onions 1/4 cup grated Parmesan cheese 2 hard-cooked eggs, chopped Instructions: Steam the asparagus in a steamer for 3 minutes or until tender-crisp. Whisk the olive oil, lemon juice, lemon zest, remaining 1/2 teaspoon salt and pepper together in a large mixing bowl. Stir in the rice, asparagus and green onions. Spoon into a serving bowl.
