| Arugula-Stuffed Calzones |

Ingredients: 1 tablespoon olive oil 1 green pepper, diced 2 cloves garlic, minced 1 small bunch arugula, chopped 1 cup nonfat ricotta cheese 1/2 cup shredded nonfat mozzarella cheese 1/4 cup chopped fresh basil Pinch of ground red pepper 1 tube (10 ounces) refrigerated pizza dough 1 tablespoon cornmeal Instructions: Divide the dough into 4 pieces. Working on a lightly floured surface, roll or press each piece into a 6" circle or a 4" x 6" rectangle. Divide the filling among the pieces, mounding it on half of the dough and leaving 1/2" margin. Fold the dough over the filling and crimp the edges well to seal. Sprinkle a large baking sheet with the cornmeal. Place the calzones on the sheet. Bake at 500 F or 8 to 10 minutes, or until golden.
