Black-Eyed Peas with Greens and Smoked Tofu PDF E-mail
Ingredients:
8 ounce baked, seasoned and smoked tofu, cut into 1/2-inch dice 
16 ounce black-eyed peas, frozen 
2 teaspoon canola oil 
1/4  teaspoon freshly ground black pepper, or to taste 
2  teaspoon hot pepper sauce, or to taste 
16 ounce mustard greens, or spinach, frozen and chopped 
1 onion, sliced 
1/4 teaspoon salt, or to taste 
4 cup water 

Instructions:
In a medium saucepan, heat oil over medium heat. Add onion and cook, stirring occasionally, until well browned, about 10 minutes.
 
Stir in peas, greens, tofu, water, hot sauce, salt and pepper; bring to a boil over high heat. Reduce heat to low, cover and cook until greens and peas are tender, about 25 minutes. Adjust seasoning with salt, pepper and hot sauce, if desired. Serve immediately.
