Broccoli And Eggs PDF E-mail
Ingredients:
1 cup fat free egg substitute
1/4 cup skim milk
1/4 cup minced fresh coriander
1/4 teaspoon ground black pepper
1 cup chopped cooked broccoli
2 teaspoons margarine
4 flour tortillas
1 cup mild or medium salsa
1/2 cup nonfat yogurt

Instructions:
In a small bowl, whisk together the eggs, milk, coriander and pepper. Stir in the broccoli.

Heat a large no-stick frying pan over medium heat for 3 minutes. Add the margarine and swirl the pan to distribute it well. Add the egg mixture and cook, stirring frequently, until set. Remove from the heat.

Wrap the tortillas in a damp paper towel. Microwave on high for 30 seconds, or until hot and pliable.

Divide the eggs among the tortillas and roll to enclose the filling. Serve with the salsa and yogurt.
