| Broccoli-Red Pepper Frittata |

Ingredients: 6 egg whites 3 cups cooked broccoli florets, drained 1 jar (7 ounces) roasted red peppers, drained 1 clove garlic, minced 1/4 cup minced scallions Salt and black pepper Instructions: Coat a 9" pie pan with no-stick spray. Pour the egg mixture into the pan and bake at 350 F for 25 minutes, or until the egg whites are set. Remove and low to rest for 5 minutes. Loosen the edges with a spatula. Cut into wedges and serve.
