Cheese Ravioli with Three Pepper Topping PDF E-mail
Ingredients:
16 ounces cheese ravioli
3 tablespoons olive oil
1 green bell pepper, thinly sliced
1/2 red bell pepper, thinly sliced
1/2 yellow bell pepper, thinly sliced
1 small onion, diced
2 cups chicken broth, divided crushed red pepper to taste

Instructions:

Bring a large pot of lightly salted water to a boil. Add ravioli and cook for 8 to 10 minutes or until al dente; drain.
                     
Heat olive oil in large saute pan. Add peppers and onion; cook 5 minutes. Add one cup of the broth and cook stirring another five minutes.
                  
Add remainder of broth and cook until most of the broth has evaporated. Top ravioli with pepper and broth mixture.
