Balsamic Roasted Shallots PDF E-mail
Ingredients:

12 medium sized shallots 
1/4 cup balsamic vinegar 
1/4 cup red wine vinegar 
1 teaspoon sugar 
1/2 teaspoon salt 
1/4 teaspoon black pepper 

Instructions:
Cut the root end off the shallots and remove the skin. Cut them in half and lay in a small shallow roasting pan.

Whisk the vinegars, sugar and seasonings together and pour over the shallots. Cover the pan snugly with foil and bake for 15 minutes. 

Remove the foil, stir well and continue to cook for 5 more minutes. Let cool before serving or refrigerate until ready to use. These are a great item to have on hand to add to salads or as a side dish with a simple roast chicken.
