| We have been enjoying the harvest produce. I made an apple cake over the weekend that everybody liked, and I thought that I would pass on the recipe because it is vegan, has no sugar or added fat, uses in season apples and really is yummy. The recipe is from "Salt Spring Island Cooking" by Rodney Polden and Pamela Thornley: | | Ingredients | 1-1/2 cups dates 1 cup raisins 3/4 cup boiling water 2-1/3 cups flour 1 tsp baking soda 1 tsp baking powder 1/2 tsp salt 1-1/2 tsp cinnamon 1/2 tsp nutmeg 1-1/4 cup apple juice or water 1-1/2 cups grated apples 1 cup walnuts
| | Directions | Carefully puree the dates, raisins and water in a blender or food processor. In a medium sized bowl, mix the dry ingredients and add the puree. Fold in the juice, apples and walnuts. Bake in an oiled 8" by 8" (2L) square pan at 350 F (180 C) for 45 minutes. I think this cake would also be nice with cream cheese frosting. |
